Our friend and colleague Laura Sayre reviewed a book on that
very subject recently. Here’s what Laura had to say:
I don't know too much about sustainable agave production
aside from
what I learned from Ana
Valenzuela-Zapata’s and Gary Nabhan's book. I
assume you read the review.
So I would definitely recommend the book itself for further
info.
You might also look at the New Farm articles in a series

that Don Lotter did for us, for instance this one on pulque,
